Dodo Blend

Espresso Perfection

When it comes to crafting the perfect espresso roast, the blend of two distinct coffee beans can create a symphony of flavors that tantalizes the palate. Enter the Dodo Blend, a fusion of two exceptional coffees: Brazil Prima Qualita and Bucaramanga El Gato from Colombia. Together, these beans form a harmonious blend that elevates the espresso experience to new heights. Let’s dive into the unique characteristics of each coffee and explore how they come together to create this remarkable espresso roast.

Brazil Prima Qualita

The Brazil Prima Qualita is a premier coffee grown in the lush regions of Cerrado and Minas Gerais. This 17/18 screen blend is comprised predominantly of natural process beans, sourced from a small farmholder. The meticulous cultivation of this coffee is supported by expert regional cuppers who have curated a crop that represents the best of Brazilian specialty coffee.

Flavor Profile

With its sweet, full-bodied character, the Brazil Prima Qualita is celebrated for its exceptional flavor profile. The coffee exhibits pronounced sweetness with delightful notes of dried apricot, tangerine, and cashew. Its light acidity and heavy body provide a soft mouthfeel, while the citrusy aroma adds a subtle kick. The natural processing method, where cherries are sun-dried with a portion of the mucilage intact, enhances the coffee’s inherent sweetness and fruity notes, making it a standout component of the Dodo Blend.

Bucaramanga El Gato:

Complementing the Brazilian beans is the Bucaramanga El Gato, a distinguished coffee from Colombia’s Santander region. Known for its rich volcanic soils and ideal microclimates, this 17/18 screen Colombia Supremo green coffee is handpicked and washed, ensuring a high level of quality and flavor.

Flavor Profile

The Bucaramanga El Gato shines with its medium body and balanced acidity, offering bright notes of plum and grapefruit, complemented by a subtle toasted almond aroma. The natural shade-grown environment, where coffee trees thrive among lush forests, contributes to its complexity and depth of flavor.

The Perfect Espresso: Dodo Blend

When these two exceptional coffees come together in the Dodo Blend, the result is nothing short of extraordinary. The full-bodied richness of the Brazil Prima Qualita melds beautifully with the bright, fruity notes of the Bucaramanga El Gato, creating a harmonious balance that delights the senses.

Why It Works

  1. Complexity and Depth: The combination of heavy body from the Brazil Prima Qualita and the medium body of the Bucaramanga El Gato creates a layered experience. Each sip reveals new nuances, from the rich sweetness of dried fruit to the vibrant acidity of citrus
  2. Balanced Acidity: The light acidity of the Brazilian coffee offsets the medium acidity of the Colombian, allowing for a smooth finish that doesn’t overwhelm the palate. This balance is essential for an espresso, ensuring that it can be enjoyed straight or as the base for lattes and cappuccinos.
  3. Aromatic Symphony: The citrusy aroma from the Brazil Prima Qualita combined with the toasted almond notes from the Bucaramanga El Gato creates an inviting fragrance that enhances the overall espresso experience. It’s the kind of aroma that beckons you to take that first sip.
  4. Sustainable Practices: Both coffees are sourced from regions that prioritize sustainable and ethical farming practices. This commitment not only supports the environment but also ensures that the farmers are fairly compensated. While this may not change the taste of the blend, we filter coffee growers with these items in mind.

Pintail Decaf

REALLY GOOD DECAF COFF.

Introducing our Pintail Decaf, crafted from Colombia Excelso beans that are decaffeinated using the eco-friendly Swiss Water Process (SWP). This decaf offers the best of both worlds: a satisfying, full-flavored coffee experience with none of the caffeine. Pintail Decaf is a medium to dark roast, featuring Bourbon, Caturra, and Typica varieties, carefully sourced for their balanced profile, clean cup, and aromatic appeal.

The Science Behind Swiss Water Process Decaf

Decaf doesn’t have to mean compromised quality. Our Pintail Decaf undergoes the Swiss Water Process, a revolutionary decaffeination method that preserves flavor without any chemicals. Instead of using solvents, this process relies on water and activated charcoal to remove 99.9% of caffeine. Here’s how it works: green coffee beans are soaked in pure water, allowing caffeine to dissolve. The caffeine is then filtered out through a carbon-charcoal process, ensuring that only caffeine molecules are removed while keeping the beans’ flavors intact.

Compared to traditional methods that rely on chemicals, the Swiss Water Process is completely natural and maintains the unique flavor profile of the coffee. It’s an ideal choice for those seeking a pure, flavorful decaf that doesn’t skimp on quality.

Flavor Profile

Pintail Decaf is a standout for its balance and complexity. Despite being decaffeinated, it retains the rich body and smoothness you’d expect from an excellent Colombian coffee. With a pronounced aroma and subtle buttery overtones, this coffee brings the best of South America’s renowned coffee heritage to your cup. A medium acidity brightens each sip without overwhelming the natural sweetness of the beans.

Cupping Notes

  • Aroma: Rich and aromatic, with hints of nuts and caramel
  • Flavor: Buttery undertones with a clean, balanced profile
  • Body: Medium to full
  • Acidity: Medium, adding brightness without overpowering the smoothness
  • Aftertaste: Smooth, with a lingering sweetness

Brewing Recommendations

Pintail Decaf is versatile and performs beautifully with drip and pour-over methods. Here are some tips to bring out its full flavor:

  • Drip: A medium grind highlights the buttery notes and preserves the clean, smooth body.
  • Pour-Over: A slightly coarser grind and controlled pour can enhance the aroma and bring out the bright acidity.

Why Choose Pintail Decaf?

Pintail Decaf isn’t just another decaffeinated coffee; it’s a well-rounded, full-bodied brew that makes decaf drinkers feel like they’re not missing out. If you’re after a decaf that feels indulgent and true to origin, Pintail Decaf is sure to satisfy with every sip. Plus, with the environmentally friendly and chemical-free Swiss Water Process, you can feel good about every cup.

Rock Wren

Wren in Rome.

The Rock Wren blend brings together the best of Chiapas, Mexico, from the Rancho San Francisco estate. This coffee is truly one of the hidden gems of Central America. Grown by third-generation farmers Delmar and Fernando Moreno Guillen, the beans from this region are strictly high-grown (SHG) at the perfect altitude, allowing the coffee plants to thrive under the natural shade of towering trees. While not certified organic, the coffee is naturally grown and processed without the use of chemical fertilizers, reflecting a dedication to sustainability and quality: all Dodo standards.

Flavor You Can’t Ignore

Rock Wren is primarily composed of Typica and Bourbon varieties, two of the most respected and traditional coffee beans in the world. These beans produce a brew that’s smooth, rich, and delightfully layered with complexity. With a chocolatey almond aroma and flavor notes of cacao, almonds, and a hint of floral sweetness, every sip is a treat. There’s also a subtle caramel finish paired with a refined acidity that makes for a smooth yet exciting cup.

A Coffee That Adapts

One of the standout characteristics of Rock Wren is its versatility. Whether you prefer a light, medium, or dark roast, these beans develop beautifully across the roasting spectrum. Because they’re softer than many other high-grown coffees, they tend to roast quickly, producing big, well-developed beans with deep, consistent flavor. We roast these beans Medium-Light to highlight the citrus notes that pair so well with the floral sweetness.

Chiapas, the region where Rock Wren is grown, lies in southern Mexico near the border of Guatemala. This gives the coffee a flavor profile similar to Guatemalan varieties, with a medium body and balanced acidity. It’s a full, satisfying brew with earthy, oaky undertones and a slight nuttiness that rounds out each sip.

Cupping Notes

  • Aroma: Chocolatey almond
  • Flavor: Cacao, almond, slight floral hints, caramel sweetness
  • Body: Medium
  • Acidity: Refined, not overpowering
  • Aftertaste: Smooth and subtly sweet

How to Brew

Rock Wren is perfect for a variety of brewing methods, making it an ideal choice for coffee enthusiasts who love to experiment. Whether you’re brewing a pour-over, pulling a shot of espresso, or crafting a cold brew, this coffee excels. Here are a few recommendations:

  • Drip or Pour-Over: A medium-light roast brings out its chocolate and almond notes, offering a balanced and refreshing cup.
  • Espresso: A fine grind will highlight its rich body and refined acidity, resulting in a bold and smooth shot.
  • Cold Brew: This coarse grind yields a crisp, refreshing cold brew with a sweet, nutty finish.

Why Choose Rock Wren?

This coffee is perfect for anyone looking for a high-quality, versatile coffee that can adapt to different brewing methods at lighter roast levels. Whether enjoyed solo or as part of a blend, the Rock Wren will quickly become a favorite thanks to its exceptional flavor, consistent quality, and ability to shine no matter how it’s brewed.

Blue Macaw

This blend blue up.

Here we have the Familia Pacas Sapphire Blend; a beautiful blend of 75% Bourbon and 25% Pacamara, grown high up in the Apaneca-Ilamatepec Mountains of El Salvador. This coffee is all about balance, from the farms where it’s grown to the cup you’ll enjoy. Hand-picked at the peak of ripeness and carefully washed, milled, and patio-dried, this blend offers a bright, flavorful experience that coffee lovers will appreciate. The Best of Both Worlds

Bourbon is a well-known variety for a reason—it thrives at high altitudes and delivers incredible flavor. Pacamara, a hybrid of Bourbon and Typica, adds complexity and depth, making this blend truly special. Grown at 3,900 feet on shade-covered farms, these beans are nurtured to perfection, resulting in a clean and vibrant coffee with a lot of character.

Flavor Profile

When you brew the Sapphire Blend, you’re in for a treat. The first thing you’ll notice is the refreshing citrus aroma—it’s like walking through an orchard in bloom. In the cup, you’ll taste notes of blood orange and orange blossom, with a nice balance of medium body and acidity. It’s bright and lively, yet smooth, making each sip feel like a little burst of sunshine.

Some of the highlights

  • Balanced Body & Acidity: This blend strikes the perfect balance—it’s got just enough body to give it depth, and the acidity is bright without being overpowering. It’s the kind of coffee that leaves you feeling refreshed.
  • High-Quality Varieties: The combination of Bourbon and Pacamara means you’re getting a cup full of rich, layered flavors. Both varieties are prized for their exceptional cup quality, and together, they create something really special.
  • Careful Processing: The washed process, combined with meticulous hand-picking and patio drying, lets the true flavors of the coffee shine through. You get a clean, crisp cup every time.

How to Brew

This medium roast blend is perfect for a pour-over or drip brew. That being said, you are going to get some exceptional espresso out of this blend. Its balanced flavor also makes it a great choice for blending with other beans, but honestly, it’s so good on its own you might not want to mix it with anything else.

Melipona

You'll love it, honey.

We have the remarkable Finca La Guachoca Honey Microlot, a true standout from the lush slopes of El Salvador's Santa Ana region. The name "Melipona" is the endangered species of bee that actually pollinates this crop in El Salvador: a nod to the honey worker (pun intended) that we couldn't operate without!

Grown on the 69-acre farm of Vidal Marroquin, nestled between the Santa Ana Volcano and Lake Coatepeque, this Pacamara variety microlot offers a sensory journey unlike any other. Hand-picked, honey-processed, and shade-grown, it embodies both tradition and innovation, representing the pinnacle of El Salvador’s coffee craftsmanship.

The Magic of Pacamara

At the heart of this microlot is the Pacamara variety, a hybrid of Pacas and Maragogipe, prized for its exceptional cup quality and complexity. Grown at high elevations in volcanic soil, this coffee flourishes in the shade and is meticulously cared for from cherry to cup. Honey processing adds another layer of uniqueness, where the mucilage remains intact during drying, leading to a beautifully balanced and sweet flavor profile.

Flavor Profile

Expect a citrusy aroma that’s bright and inviting, reminiscent of freshly peeled tangerines. In the cup, you’ll find delicate notes of milk chocolate that complement the citrus flavors, creating a medium-bodied brew with a pleasant acidity. The combination of these elements results in a cup that is both vibrant and smooth, with a lingering sweetness that’s perfect for a relaxed pour-over or drip brew.

Why Finca La Guachoca Stands Out

  • Exceptional Cup Quality: The Pacamara variety is closely related to the Bourbon family, renowned for winning numerous cupping competitions. The combination of volcanic soil and high-altitude cultivation enhances the flavor depth, giving this microlot its distinctive character.
  • Honey Processing: This method enhances the coffee’s natural sweetness while preserving its fruity notes, resulting in a complex yet approachable flavor that’s ideal for medium roasts.
  • Sustainable and Ethical Farming: Finca La Guachoca is part of Café Pacas, a fifth-generation family-owned operation committed to sustainable practices. Their dedication to preserving natural resources, reducing water consumption, and supporting biodiversity ensures that every cup not only tastes good but also supports a better future for coffee farming.

Best Brewing Methods

This microlot is perfectly suited for pour-over and drip brewing methods, where its bright citrus notes and chocolate undertones can shine. Whether you're enjoying a quiet morning or impressing guests with a specialty brew, Finca La Guachoca offers an unforgettable coffee experience.
